These Savory Glazed Beef Tortilla Kebabs are a quick and easy weeknight dinner or appetizer, featuring layers of glazed ground beef and crispy tortilla squares on skewers, baked to perfection with a sweet and savory glaze.

Ingredients

Scale
  • 1 lb ground beef (80/20 works best)
  • 1 tablespoon olive oil
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons packed brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon rice vinegar (or apple cider vinegar)
  • 1 teaspoon sesame oil (optional)
  • 1/2 teaspoon black pepper
  • 4 large flour tortillas (burrito size, about 10-inch)
  • Wooden skewers, soaked in water for 15 minutes
  • Sesame seeds and green onions for garnish (optional)

Instructions

  1. Make the Glaze: In a small bowl, whisk together the soy sauce, brown sugar, minced garlic, rice vinegar, sesame oil, and black pepper. Set aside.
  2. Brown the Beef: Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and no longer pink, about 5-7 minutes. Do not drain all the fat.
  3. Glaze the Beef: Pour the prepared sauce over the cooked beef. Stir and let simmer for 2-3 minutes until the sauce thickens slightly and coats the beef. Turn off the heat.
  4. Prep the Tortillas: While the beef cooks, stack the tortillas on a cutting board and cut into 2-inch squares (about 16-20 squares per tortilla).
  5. Assemble the Kebabs: Preheat oven to 400°F (200°C). On a soaked skewer, layer a tortilla square, a piece of glazed beef, another tortilla square, more beef, repeating until the skewer is full, leaving about 1 inch free at the bottom. Press gently.
  6. Bake: Place assembled skewers on a lined baking sheet. Brush any remaining glaze from the beef bowl over the tortilla pieces. Bake for 10-12 minutes, until tortilla edges are golden brown and crispy.
  7. Garnish and Serve: Remove from oven, let cool for 1-2 minutes. Sprinkle with sesame seeds and sliced green onions if desired. Serve hot.

Notes

Soak wooden skewers in water for 15 minutes to prevent burning. Use room temperature tortillas to avoid cracking. Watch oven time closely; check at 10 minutes. For extra glaze, make a double batch and brush on before serving. Leftovers can be stored in the fridge for up to 3 days and reheated in the oven or air fryer at 350°F for 5-7 minutes.
