Cheesy Doritos Taco Casserole

A quick and easy comfort meal combining seasoned ground beef, melted cheddar cheese, and crunchy crushed Nacho Cheese Doritos baked to perfection. Perfect for family dinners and customizable to suit various dietary preferences.

  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 1 large bag Nacho Cheese Doritos (about 9.75 oz)
  • 2 cups shredded cheddar cheese
  • 2 tbsp Mexican seasoning blend (chili powder, cumin, paprika, oregano)
  • 1 cup tomato sauce
  • 1 can black beans, drained and rinsed (optional)
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat 1 tbsp olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add ground beef to the skillet, breaking it up with a spoon, and cook until no longer pink, about 6-8 minutes. Drain excess fat if needed.
  4. Stir in 2 tbsp Mexican seasoning, salt, and pepper to taste. Pour in 1 cup tomato sauce and mix well. Fold in black beans if using. Let simmer for 2-3 minutes to blend flavors.
  5. Crush the Doritos gently in a large mixing bowl, aiming for mostly small chunks, not dust.
  6. Spread half of the crushed Doritos evenly on the bottom of a 9×13-inch baking dish. Layer half of the beef mixture over the chips, then sprinkle 1 cup shredded cheddar cheese evenly on top.
  7. Repeat layers with remaining beef mixture and cheddar cheese. Finish with the remaining crushed Doritos on top.
  8. Bake in the preheated oven for 15-20 minutes or until the cheese is bubbly and the Doritos are golden and crispy.
  9. Let the casserole cool for about 5 minutes before slicing. Garnish with fresh cilantro if desired and serve.

Notes

Watch the Doritos during baking as they can brown quickly; cover loosely with foil if they brown too fast. Crushing Doritos to mostly small chunks (not dust) helps maintain texture. Let casserole rest 5 minutes before serving to set slices. Can be made ahead and refrigerated up to 24 hours before baking, adding a few extra minutes to bake time. Leftovers keep well refrigerated for 3 days or frozen for up to 2 months.
