Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, cream together ½ cup softened unsalted butter, ¾ cup brown sugar, and ¼ cup granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add 1 large egg and 1 teaspoon vanilla extract to the butter mixture and mix until smooth, about 1-2 minutes.
  4. In a large bowl, whisk together 1 cup all-purpose flour, 1 ½ cups rolled oats, ½ teaspoon baking soda, ½ teaspoon salt, and optional ½ teaspoon cinnamon until no lumps remain.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. The dough will be thick and slightly sticky; avoid overmixing.
  6. Fold in 1 cup semi-sweet chocolate chips evenly throughout the dough.
