  • Fresh parsley, chopped (a handful)
  • A squeeze of fresh lemon juice (optional)

Instructions

  1. Rinse and chop the carrots, celery, and onion. Mince the garlic cloves. Trim excess fat from the chicken thighs or beef roast and cut into large chunks if needed.
  2. Optional: Heat a tablespoon of oil in a skillet over medium-high heat. Brown the meat on all sides until a golden crust forms to add depth of flavor.
  3. Place the chopped carrots, celery, onion, and garlic into the slow cooker. Layer the browned meat (or raw if skipping browning) on top.
  4. In a bowl, whisk together 2 cups broth, 2 tablespoons tomato paste, 1 tablespoon Worcestershire sauce, dried thyme, rosemary, smoked paprika, salt, and pepper. Pour this mixture evenly over the meat and vegetables.
  5. Cover and set your slow cooker to low. Cook for 6-8 hours until the meat is tender and flavors meld. Alternatively, cook on high for 3-4 hours if short on time.
  6. Check for doneness: meat should be fork-tender and vegetables soft but not mushy. Adjust seasoning if needed.
  7. Stir in fresh parsley and a squeeze of lemon juice just before serving to brighten flavors.
