  • ¼ cup finely diced yellow onion

Instructions

  1. Rinse and pat dry chicken breasts. Butterfly each breast by slicing horizontally through the thickest side, stopping about ½ inch from the edge to open like a book. Season both sides with salt and pepper. (About 10 minutes)
  2. In a mixing bowl, combine dry bread cubes or stuffing mix with melted butter, chopped sage, thyme, parsley, diced onion, and minced garlic. Gradually add chicken broth, stirring until moist but not soggy. Season with salt and pepper. (10 minutes)
  3. Spoon an even amount of the herb stuffing onto one side of each butterflied chicken breast. If using cheese, sprinkle it on top of the stuffing. Fold the chicken back closed and pinch edges to seal. (5 minutes)
  4. Preheat oven to 375°F (190°C). Lightly brush the outside of each stuffed chicken breast with olive oil. Place seam-side down in a baking dish or sheet pan. (5 minutes)
