Creamy Crockpot Chicken with Cream Cheese

A simple, tender, and velvety crockpot chicken recipe made with cream cheese and pantry staples, perfect for cozy dinners and busy weeknights.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)
  • 8 oz (227g) cream cheese, softened
  • 1 cup (240ml) chicken broth, low sodium preferred
  • 3 garlic cloves, minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • Optional: fresh parsley for garnish

Instructions

  1. Rinse and pat dry the chicken breasts.
  2. In a small bowl, mix salt, black pepper, onion powder, paprika, and dried thyme. Rub the mixture evenly over both sides of each chicken breast.
  3. Place the seasoned chicken breasts in the bottom of the crockpot. Pour the chicken broth over the chicken, then sprinkle the minced garlic on top.
  4. Cover and cook on low for 4 to 5 hours, or on high for 2.5 to 3 hours, until chicken reaches an internal temperature of 165°F (74°C) and is tender enough to shred with a fork.
  5. About 30 minutes before serving, soften the cream cheese in a microwave-safe bowl for 20-30 seconds. Stir it into the crockpot, mixing gently to create a smooth sauce.
  6. Once the cream cheese is fully incorporated, taste and adjust seasoning if needed. Garnish with fresh parsley if desired, then serve over rice, noodles, or with steamed veggies.

Notes

Use softened cream cheese to avoid clumps. Cook on low for more tender chicken. Avoid stirring before cooking is complete to prevent curdling. If sauce is too thin, cook uncovered on high for 15-20 minutes to thicken. Add broth or milk if sauce is too thick.
