  • 1 1/2 cups (150g) graham cracker crumbs (substitute digestive biscuits or crushed vanilla wafers)
  • 1/4 cup (50g) granulated sugar
  • 6 tablespoons (85g) unsalted butter, melted
  • 16 oz (450g) cream cheese, softened
  • 1 cup (240ml) heavy whipping cream, cold
  • 2/3 cup (85g) powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon fresh lemon juice
  • Fresh berries (strawberries, blueberries, raspberries, or a mix) – about 1 to 1 1/2 cups (150-200g)
  • Optional: A sprinkle of powdered sugar or a few fresh mint leaves for garnish

Instructions

  1. In a medium bowl, combine 1 1/2 cups graham cracker crumbs with 1/4 cup granulated sugar. Pour in 6 tablespoons melted unsalted butter. Mix until crumbs are evenly coated and look like wet sand (about 2 minutes).
  2. Transfer the crumb mixture into a 9-inch springform pan. Press down firmly and evenly with the bottom of a glass or measuring cup. Chill in the refrigerator for at least 10 minutes.
  3. In a large bowl, whip 1 cup cold heavy whipping cream with an electric mixer on medium-high speed until soft peaks form (about 3-4 minutes).
  4. In another bowl, beat 16 oz softened cream cheese with 2/3 cup sifted powdered sugar and 1 teaspoon vanilla extract until smooth and creamy (about 2-3 minutes).
  5. Mix in 1 tablespoon fresh lemon juice to the cream cheese mixture.
  6. Gently fold about one-third of the whipped cream into the cream cheese mixture to lighten it, then fold in the remaining whipped cream until fully combined.
  7. Spoon the filling over the chilled crust and spread evenly. Cover tightly with plastic wrap and refrigerate for at least 4 hours or overnight.
  8. Just before serving, arrange fresh berries on top of the cheesecake. Optionally, garnish with powdered sugar or fresh mint leaves.

Notes

Use softened cream cheese for smooth filling. Whip cream to soft peaks to avoid grainy texture. Press crust firmly to avoid crumbling. Chill at least 4 hours or overnight for best texture. If filling is too soft, add dissolved gelatin next time. Run a warm knife around edges before slicing for clean cuts. Freeze cheesecake without berries for up to 1 month.
