A quick and easy comforting dinner featuring tender chicken breasts in a rich, garlicky cream sauce with Parmesan and sun-dried tomatoes. Perfect for cozy weeknight meals.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 700g)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (extra virgin preferred)
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, finely minced
  • 1 cup chicken broth (240 ml), preferably low sodium
  • 1 cup heavy cream (240 ml)
  • ½ cup grated Parmesan cheese
  • ½ cup chopped sun-dried tomatoes (optional)
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon chopped fresh basil or parsley

Instructions

  1. Pat the chicken breasts dry with paper towels, then season generously with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Add chicken breasts and cook undisturbed for 5-6 minutes until a deep golden crust forms. Flip and cook the other side for another 5 minutes. Remove chicken from the pan and set aside.
  3. Reduce heat to medium. Add butter to the skillet and melt gently. Add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn.
  4. Pour in chicken broth, scraping up any browned bits from the pan. Let simmer for 3-4 minutes to reduce slightly.
  5. Stir in heavy cream and grated Parmesan cheese. Continue stirring until the sauce thickens and becomes silky, about 3-5 minutes. Add a splash more broth if sauce is too thick.
  6. Stir in chopped sun-dried tomatoes and red pepper flakes. Taste and adjust seasoning with salt and pepper as needed.
  7. Return the seared chicken breasts to the pan, nestling them into the sauce. Spoon sauce over the top, cover, and simmer gently for 5-7 minutes until chicken is cooked through (internal temperature 165°F / 74°C).
  8. Sprinkle with fresh basil or parsley before serving.

Notes

Do not rush searing the chicken to develop a golden crust that locks in juices. Watch garlic carefully to avoid burning. Stir sauce constantly after adding cream and cheese to prevent curdling. You can butterfly chicken breasts for faster cooking but avoid overcooking. For dairy-free version, substitute heavy cream with coconut cream and omit Parmesan or use dairy-free cheese.
