A quick and easy recipe featuring ground beef burritos smothered in a rich, creamy sauce made with cream cheese and spices, perfect for comforting weeknight meals.

Ingredients

Scale
  • 1 pound ground beef (80/20)
  • 4 large flour tortillas (at least 10 inches/25 cm in diameter)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese (100 g), sharp or mild
  • ½ cup beef broth (120 ml)
  • ½ cup tomato sauce (120 ml), plain or lightly seasoned
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and black pepper to taste
  • 1 tablespoon olive oil or vegetable oil
  • Optional toppings: sour cream, chopped cilantro, sliced jalapeños, avocado slices

Instructions

  1. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add chopped onion and sauté for 2-3 minutes until translucent.
  2. Add minced garlic and cook for another 30 seconds, being careful not to burn it.
  3. Add ground beef and cook, breaking it up with a spatula, until fully browned and no pink remains (about 7-8 minutes). Drain excess fat if needed.
  4. Sprinkle chili powder, cumin, salt, and pepper over the beef mixture. Stir well and cook for another minute to bloom the spices.
  5. Lower heat to medium-low. Add softened cream cheese, shredded cheddar, beef broth, and tomato sauce directly into the skillet. Stir constantly until cream cheese melts and forms a smooth, creamy sauce (about 3-5 minutes). Add more broth if sauce is too thick.
  6. Warm tortillas briefly in a dry pan or microwave (about 15 seconds) to make them pliable.
  7. Spoon a generous amount of the creamy beef mixture onto the center of each tortilla. Fold sides in and roll tightly from one end to the other.
  8. Place burritos seam-side down in an oven-safe dish. Spoon remaining creamy sauce over burritos. Optionally, top with extra shredded cheese.
  9. Bake in a preheated oven at 350°F (175°C) for 10 minutes until warmed through and cheese is melted.
  10. Garnish with optional toppings like sour cream, cilantro, or jalapeño slices. Serve immediately while warm and creamy.

Notes

Soften cream cheese before mixing to avoid clumps. Let beef brown without stirring too often for better flavor. Warm tortillas before assembling to prevent cracking. Cover burritos with foil during first 5 minutes of baking to keep moist, then uncover to brown cheese.
