A quick and easy protein-packed strawberry cheesecake ice cream made with simple ingredients and a Ninja Creami machine, perfect for a healthy dessert or post-workout treat.

  • 1 cup (150g) frozen strawberries
  • 4 oz (115g) cream cheese, softened
  • 1/3 cup (~30g) vanilla protein powder (whey or plant-based)
  • 1/2 cup (120ml) unsweetened almond milk
  • 1/4 cup (60g) plain full-fat Greek yogurt
  • 12 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • Pinch of salt (optional)
  • 1/4 cup crushed graham crackers (optional, for mixing in or topping)

Instructions

  1. Soften the cream cheese by leaving it at room temperature for about 15 minutes or microwaving for 10 seconds.
  2. In a mixing bowl, whisk together the softened cream cheese, almond milk, Greek yogurt, honey or maple syrup, vanilla extract, and lemon juice until smooth and creamy.
  3. Gradually sift in the vanilla protein powder and stir or whisk until fully incorporated. Add a splash more almond milk if the mixture is too thick.
  4. Roughly chop the frozen strawberries and gently fold them into the mixture.
  5. If desired, stir in crushed graham crackers now or reserve to sprinkle on top after processing.
  6. Pour the mixture into the Ninja Creami pint container and freeze for at least 24 hours until completely solid.
  7. Process the frozen pint in the Ninja Creami machine using the ‘Ice Cream’ function.
  8. If the ice cream is too crumbly, use the ‘Re-spin’ function once or twice to achieve a creamier consistency.
  9. Add mix-ins like extra strawberry pieces or graham cracker crumbs during the mix-in cycle if desired.
  10. Serve immediately for soft-serve texture or transfer back to the freezer for 30-60 minutes for firmer scoops.

Notes

Ensure cream cheese is softened to avoid lumps. Use a fine vanilla whey protein powder for best texture. Freeze base for a full 24 hours before processing. Use the ‘Re-spin’ function to improve creaminess if needed. Add chunky mix-ins during the mix-in cycle, not before freezing. Adjust sweetness based on protein powder flavor.
