  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 celery stalks, diced
  • 1 medium carrot, diced
  • 4 cups low-sodium chicken broth or seafood stock
  • 1 cup heavy cream (can substitute half-and-half or coconut cream for dairy-free)
  • 1/2 cup grated Parmesan cheese (Parmigiano-Reggiano preferred)
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 1 pound medium shrimp, peeled and deveined
  • Optional garnishes: chopped fresh parsley or basil, extra grated Parmesan, crusty bread or garlic toast

Instructions

  1. Heat 1 tablespoon olive oil in a skillet over medium heat. Add chopped onion, celery, carrot, and garlic. Cook, stirring occasionally, until softened and fragrant, about 5-7 minutes.
  2. Transfer sautéed veggies to the slow cooker. Stir in 4 cups chicken broth, 2 tablespoons tomato paste, 1 teaspoon smoked paprika, salt, and pepper to taste. Mix well.
  3. Cover and cook on low for 4 hours to allow flavors to meld and veggies to become tender.
  4. Optional: Use an immersion blender to puree the soup until creamy for a smooth texture, or leave as is for chunkier bisque.
  5. Stir in 1 cup heavy cream and 1/2 cup grated Parmesan cheese. Heat through gently without boiling. Adjust seasoning if needed.
  6. Add peeled and deveined shrimp to the slow cooker. Stir gently, cover, and cook on low for 8-10 minutes until shrimp turn pink and opaque. Avoid overcooking.
  7. Stir gently and ladle bisque into bowls. Garnish with chopped parsley or basil and extra Parmesan. Serve with crusty bread or garlic toast.

Notes

Do not add shrimp too early to avoid overcooking. Sautéing veggies before slow cooking enhances flavor. Add Parmesan cheese near the end to preserve its flavor and prevent graininess. Blending is optional depending on preferred texture. For dairy-free, substitute heavy cream with coconut cream and Parmesan with vegan cheese alternatives.
