A rich, buttery, and garlicky white sauce perfect for pizza nights, made with simple pantry staples and ready in about 15 minutes.

  • 4 large garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 1 cup (240 ml) whole milk
  • ½ cup (50 g) grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon dried Italian herbs (optional)
  • ¼ teaspoon garlic powder (optional)

Instructions

  1. Mince the garlic cloves finely and measure out butter, flour, milk, and cheese.
  2. Place 3 tablespoons of unsalted butter in a medium saucepan over medium heat and melt gently, avoiding browning (2-3 minutes).
  3. Add the minced garlic to the melted butter and cook for 1-2 minutes until fragrant and softened but not browned.
  4. Sprinkle 2 tablespoons of all-purpose flour over the garlic and butter. Whisk continuously to form a roux, cooking for 1-2 minutes until bubbly but pale.
  5. Gradually pour in 1 cup (240 ml) of whole milk while whisking constantly to prevent lumps. Continue cooking and whisking for 3-5 minutes until the sauce thickens and coats the back of a spoon.
  6. Reduce heat to low and stir in ½ cup (50 g) grated Parmesan cheese, ½ teaspoon salt, ¼ teaspoon freshly ground black pepper, and optional herbs or garlic powder. Stir until cheese melts and sauce is smooth and creamy.
  7. Taste and adjust seasoning; add more garlic powder or fresh garlic for stronger garlic flavor or a splash more milk for thinner sauce.
  8. Remove from heat once desired consistency is reached. Sauce will thicken slightly as it cools.

Notes

Cook garlic low and slow to avoid bitterness. Whisk constantly when adding milk to prevent lumps. Use freshly grated Parmesan for best melting and flavor. Adjust thickness after cooling by adding milk if needed. Avoid overheating after adding cheese to prevent separation.
