This Crispy Buffalo Chicken Garlic Bread is a quick and easy 20-minute recipe perfect for weeknight dinners or game day snacks. It features shatteringly crisp garlic bread topped with spicy Buffalo chicken and gooey melted cheese.

Ingredients

Scale
  • 1 loaf French bread or Italian bread (about 12–14 inches long)
  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 teaspoon dried parsley
  • 1/4 teaspoon salt
  • 2 cups cooked shredded chicken
  • 1/2 cup Buffalo wing sauce
  • 2 tablespoons melted butter
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup crumbled blue cheese (optional)
  • 2 tablespoons chopped fresh parsley or green onions

Instructions

  1. Preheat your broiler to high and position an oven rack about 6 inches from the heating element.
  2. In a small bowl, combine 1/2 cup softened unsalted butter, 4 minced garlic cloves, 1 teaspoon dried parsley, and 1/4 teaspoon salt. Mash together with a fork until well combined.
  3. Slice the loaf of French or Italian bread in half lengthwise. Place both halves cut-side up on a baking sheet. Use a pastry brush to spread the garlic butter evenly over the cut surfaces.
  4. Place the baking sheet under the broiler for 2-3 minutes, until the edges are golden brown and the butter is bubbly. Watch carefully to prevent burning.
  5. While the bread is toasting, combine 2 cups shredded cooked chicken, 1/2 cup Buffalo wing sauce, and 2 tablespoons melted butter in a medium bowl. Toss until the chicken is well coated.
  6. Once the bread is toasted, spoon the Buffalo chicken mixture evenly over both halves. Sprinkle 1 1/2 cups shredded mozzarella cheese over the top. If using blue cheese, sprinkle it on now.
  7. Return the baking sheet to the broiler for another 2-4 minutes, until the cheese is melted, bubbly, and starting to brown in spots.
  8. Sprinkle with chopped fresh parsley or green onions. Let cool for 2-3 minutes before slicing. Use a sharp knife or pizza cutter to slice each half into 4-6 pieces.

Notes

For extra crispy edges, toast the bread for an extra minute during the first broil. Use room temperature butter for even spreading. Shred your own cheese for the best melt. Watch the broiler closely to prevent burning. Let the chicken come to room temperature before using to ensure even cooking.
