These crispy cheesy beef cones with creamy avocado sauce are a fun, handheld weeknight dinner ready in under 30 minutes. Ground beef seasoned with chili, cumin, and smoked paprika is folded into tortilla cones with plenty of cheese, baked until golden and crispy, and served with a fresh avocado sauce.

Ingredients

Scale
  • 1 pound (450g) ground beef (80/20 preferred)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 6 large flour tortillas (about 8-inch / 20cm)
  • 2 cups (200g) shredded cheddar and Monterey Jack cheese, mixed
  • 2 large ripe avocados
  • 1/4 cup (60ml) sour cream
  • 2 tablespoons fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño, seeded and minced (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. Cook the beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned—about 5 to 6 minutes. Drain off any excess fat, leaving about a tablespoon in the pan for flavor.
  3. Add the aromatics: Reduce heat to medium. Add the diced onion and cook for 2 to 3 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  4. Season the beef: Sprinkle the chili powder, cumin, smoked paprika, salt, and pepper over the beef. Stir well to coat evenly. Cook for 1 minute to toast the spices, then remove from heat. Stir in half the chopped cilantro if using. Set aside.
  5. Make the creamy avocado sauce: While the beef cools slightly, cut the avocados in half, remove the pits, and scoop the flesh into a small bowl. Add the sour cream, lime juice, remaining cilantro, and minced jalapeño if using. Mash with a fork until smooth but still slightly chunky. Season with salt to taste. Cover and set aside.
  6. Assemble the cones: Lay a tortilla flat on your work surface. Spoon about 1/3 cup of the beef mixture down the center of the tortilla, leaving a border at the bottom. Top with a generous handful of shredded cheese—about 1/3 cup.
  7. Fold into cones: Fold the bottom of the tortilla up over the filling, then fold one side over, creating a cone shape. The filling should be completely enclosed at the bottom with the top open. Secure with a toothpick if needed.
  8. Bake the cones: Place each cone seam-side down on the prepared baking sheet. Use crumpled foil balls to prop them up so they stay upright. Bake for 10 to 12 minutes, until the tortillas are golden and crispy and the cheese is melted and bubbly.
  9. Serve immediately: Remove from the oven and let cool for 2 minutes. Drizzle generously with the creamy avocado sauce or serve it on the side for dipping. Garnish with extra cilantro or a squeeze of lime if desired.

Notes

Don’t overfill the tortillas; use room-temperature tortillas to prevent cracking; toast the spices for deeper flavor; make the avocado sauce first to let flavors meld; watch the oven closely as cones can burn quickly.
