Ingredients

Scale
  • 1 lb (450g) ground beef (80/20 recommended)
  • 1/2 cup finely diced yellow onion
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups (200g) shredded sharp cheddar cheese (or Monterey Jack, pepper jack, or Mexican blend)
  • 12–14 corn tortillas (6-inch)
  • Vegetable oil (for frying; about 1/2 inch in pan)
  • Optional garnish: sour cream, salsa, guacamole, fresh cilantro, lime wedges

Instructions

  1. Cook the beef: Heat a large skillet over medium-high heat with a drizzle of oil. Add ground beef and cook, breaking it up, until browned (4-5 minutes). Add diced onion and cook 1 minute until softened. Stir in garlic and cook 30 seconds until fragrant.
  2. Season the beef: Add chili powder, cumin, smoked paprika, salt, and pepper. Stir and cook 1 minute to toast spices. If dry, add 1 tablespoon water or beef broth. Remove from heat and let cool slightly.
  3. Warm the tortillas: Stack tortillas on a plate, cover with a damp paper towel, and microwave 20-30 seconds until pliable. Alternatively, warm individually in a dry skillet for 10 seconds per side.
  4. Assemble the taquitos: Lay a warm tortilla flat. Spoon about 2 tablespoons beef mixture down the center. Top with a generous pinch of shredded cheese. Roll tightly from one edge to the other. Repeat with remaining tortillas and filling (makes 12-14 taquitos).
  5. Fry the taquitos: Pour about 1/2 inch vegetable oil into a large skillet and heat over medium-high heat (350°F/175°C). Place taquitos seam-side down in hot oil, working in batches. Fry 2-3 minutes per side until golden brown and crispy. Transfer to paper towel-lined plate to drain. Sprinkle with salt while hot.
  6. Serve immediately: Arrange on a platter with sour cream, salsa, and guacamole for dipping. Garnish with lime juice and cilantro if desired.

Notes

Don’t overfill tortillas (2 tablespoons per taquito). Keep oil temperature steady at 350°F (175°C). Work in batches to avoid crowding. Let beef cool slightly before assembling to prevent cheese from leaking. Use day-old tortillas for extra crispiness. Drain on paper towels to remove excess oil. For baking: brush with oil and bake at 400°F (200°C) for 15-20 minutes, flipping halfway. For air fryer: spray with oil and cook at 375°F (190°C) for 8-10 minutes, flipping once. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in oven or air fryer (not microwave). Freeze uncooked taquitos for up to 3 months.
