These crispy cheesy buldak sausage rolls are spicy, cheesy, and ridiculously crispy. Made with puff pastry, buldak sauce, and a blend of mozzarella and cheddar, they’re perfect for game days, lazy dinners, or midnight cravings.

Ingredients

Scale
  • 1 sheet puff pastry, thawed
  • 4–5 cocktail sausages or 2 large smoked sausages
  • 3 tablespoons buldak spicy sauce
  • ½ cup shredded mozzarella cheese
  • ¼ cup shredded cheddar cheese
  • 1 large egg, beaten
  • Optional: sesame seeds and flaky sea salt for topping

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. On a lightly floured surface, unfold the thawed pastry sheet. Roll it out slightly to a roughly 10×12-inch rectangle, about ⅛-inch thick.
  3. Spread the 3 tablespoons of buldak sauce evenly over the pastry, leaving a ½-inch border on one long edge.
  4. Sprinkle the mozzarella and cheddar evenly over the sauce-covered pastry. Press it down gently.
  5. Arrange your sausages in a straight line along the long edge of the pastry, about 1 inch from the edge.
  6. Starting from the sausage edge, roll the pastry away from you, keeping it snug. Brush the bare border with a little egg wash and press to seal. Place the roll seam-side down on your baking sheet.
  7. Using a sharp knife, slice the log into 1½-inch pieces. You should get 8-10 rolls. Place them cut-side up on the baking sheet, spacing them about 2 inches apart. Brush the tops and sides generously with beaten egg. Sprinkle with sesame seeds and flaky salt if using.
  8. Wait 5 minutes, then brush with egg wash again.
  9. Bake for 18-22 minutes, until the pastry is deep golden brown and the cheese is bubbling at the edges.
  10. Let them rest on the baking sheet for 5 minutes, then transfer to a cooling rack.

Notes

For extra flaky crunch, brush the pastry with egg wash twice. If the puff pastry gets too warm while working, pop it in the fridge for 10 minutes. Don’t overstuff with cheese to prevent leaking. Use a serrated knife for clean slices. Check the rolls at 15 minutes as oven times vary. Leftovers keep in the fridge for up to 3 days; reheat in the oven or air fryer at 350°F for 5-7 minutes to restore crispiness. Unbaked rolls can be frozen for up to 3 months; bake from frozen, adding 5-7 minutes.
