These crispy cinnamon brown sugar waffles are a cozy, easy homemade breakfast treat with a perfect balance of sweet cinnamon and caramelized brown sugar, delivering a tender inside and crunchy edges.

Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/3 cup (70g) brown sugar (light or dark)
  • 1/4 teaspoon salt
  • 2 large eggs, room temperature
  • 1 3/4 cups (420ml) milk (whole or 2%)
  • 1/3 cup (75g) unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your waffle iron for about 5 minutes.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, brown sugar, and salt until evenly combined.
  3. In another bowl, beat the eggs lightly. Add the milk, melted butter, and vanilla extract, whisking until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold with a spatula just until combined; a few lumps are okay.
  5. Lightly grease the waffle iron with butter or nonstick spray. Pour about 1/2 cup (120ml) of batter onto the center of the iron, spreading slightly but not too thin.
  6. Close the lid and cook for 4-6 minutes until golden brown and crispy, adjusting time based on your waffle maker.
  7. Transfer cooked waffles to a cooling rack placed on a baking sheet to keep them crisp while cooking the rest.
  8. Serve warm with toppings like maple syrup, fresh fruit, whipped cream, powdered sugar, or honey.

Notes

Do not overmix the batter to keep waffles tender. Preheat the waffle iron thoroughly for crispy edges. Use a cooling rack to keep waffles crisp. If batter thickens, add a splash of milk before cooking. Adjust cooking time based on your waffle maker. For freezing, freeze waffles flat on a tray before storing in a freezer bag.
