  • Cinnamon sugar coating:
  • ยฝ cup (100 grams) granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat your oven to 425ยฐF (220ยฐC) and line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, whisk together flour, baking powder, salt, and granulated sugar until combined.
  3. Add cold, cubed unsalted butter to the dry mix. Use a pastry cutter or two knives to work the butter into the flour until the texture resembles coarse crumbs with pea-sized bits of butter.
  4. Pour in cold whole milk and stir gently until the dough just comes together. Avoid overmixing.
  5. Turn the dough out onto a lightly floured surface. Pat or roll it into a roughly ยฝ-inch (1.25 cm) thick rectangle.
  6. Using a sharp knife or pizza cutter, slice the dough into 1-inch (2.5 cm) squares (about 16-20 pieces).
  7. In a small bowl, mix granulated sugar and ground cinnamon for the coating.
  8. Roll each dough square in the cinnamon sugar mix, making sure all sides are covered.
  9. Place the coated bites a little apart on the prepared baking sheet.
  10. Bake for 12-15 minutes, until golden brown and crispy on the edges.
  11. Transfer to a wire rack to cool slightly before serving.
