  • 9 cups (225g) crispy rice cereal
  • 1/2 cup (113g) unsalted butter, melted
  • 1 1/2 cups (180g) powdered sugar
  • 3 full-size Butterfinger candy bars, crushed (about 5 oz or 140g)
  • 1 cup (170g) semi-sweet chocolate chips
  • 1/2 cup (130g) creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Crush the Butterfinger bars by placing them in a sealed plastic bag and gently crushing with a rolling pin or the back of a heavy pan until small, bite-sized chunks form. Set aside about a third for topping.
  2. In a microwave-safe bowl, combine chocolate chips, melted butter, and peanut butter. Microwave in 30-second bursts, stirring after each, until smooth and fully melted. Stir in vanilla extract and salt.
  3. Pour crispy rice cereal into a large mixing bowl. Pour the melted chocolate mixture over the cereal and gently fold with a spatula until evenly coated.
  4. Stir in two-thirds of the crushed Butterfinger pieces into the coated cereal. Reserve the rest for garnish.
  5. Transfer the coated cereal mix into a large zip-top bag or bowl with a lid. Add powdered sugar, seal or cover tightly, and shake gently but thoroughly until the cereal is evenly coated.
  6. Spread the coated mix onto a parchment-lined baking sheet and sprinkle the reserved Butterfinger pieces on top. Let cool completely to set the chocolate and firm up the sugar coating.
  7. Once cooled, transfer to an airtight container or serve immediately.

Notes

If the mix feels too sticky after coating, toss with extra powdered sugar or chill briefly in the fridge to firm up. Melt chocolate mixture slowly to avoid grainy texture. Shake cereal and powdered sugar in a sealed bag for even coating. Avoid pulverizing Butterfinger bars into dust; keep chunks for texture contrast. Store in airtight container at room temperature up to 1 week or refrigerate for up to 2 weeks (may reduce crunch). Freeze for up to 3 months.
