  • 12 oz (340 g) white chocolate chips or chopped white chocolate
  • 1/4 cup (50 g) granulated sugar
  • 1 tsp vanilla extract
  • 1 cup (125 g) fresh or frozen raspberries, thawed and drained if frozen
  • 2 tbsp (30 ml) heavy whipping cream
  • 1 tsp lemon zest (optional)
  • Optional toppings: finely chopped pistachios, freeze-dried raspberry powder, shredded coconut

Instructions

  1. Soften the cream cheese by leaving it at room temperature for about 30 minutes until soft but not runny.
  2. In a mixing bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth and creamy, about 2-3 minutes.
  3. Gently fold in the fresh or thawed raspberries using a spatula, keeping them mostly intact.
  4. Stir in the heavy whipping cream and lemon zest to loosen the mixture.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes until firm enough to shape.
  6. Using a small cookie scoop or tablespoon, scoop out the chilled mixture and roll into 1 inch (2.5 cm) balls. Place on a parchment-lined baking sheet.
  7. Freeze the balls for 15-20 minutes to firm up for easier dipping.
  8. Melt the white chocolate using a double boiler or microwave in short 20-second bursts, stirring until smooth and glossy.
  9. Dip each cheesecake ball into the melted white chocolate using a toothpick or fork, letting excess drip off, then place back on the parchment paper. Sprinkle optional toppings immediately if desired.
  10. Refrigerate the dipped balls for at least 30 minutes until the chocolate shell is firm.
