  • 1/2 cup (120ml) whole milk, room temperature

  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (130g) Biscoff spread
  • Vegetable oil for frying, about 3 cups (700ml)
  • Cinnamon sugar coating:
  • 1/2 cup (100g) granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. In a medium bowl, whisk together 1 cup (120g) all-purpose flour, 1 teaspoon baking powder, 1/4 teaspoon salt, and 1/4 cup (50g) granulated sugar.
  2. In another bowl, whisk 1/2 cup (120ml) whole milk, 2 tablespoons (28g) melted unsalted butter, 1 large egg, and 1 teaspoon vanilla extract until smooth.
  3. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. The dough will be slightly sticky.
  4. Portion about 1/2 teaspoon of Biscoff spread for each bite using a small spoon or piping bag.
  5. Lightly flour your hands. Pinch off a tablespoon of dough, flatten it, place the Biscoff filling in the center, then fold and seal the dough around it to form a ball about 1 to 1.5 inches in diameter. Repeat until all dough and filling are used.
  6. Heat vegetable oil in a deep pot or fryer to 350ยฐF (175ยฐC). Maintain this temperature throughout frying.
  7. Fry the bites in small batches for 2-3 minutes, turning occasionally, until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
  8. While still warm, toss the bites in a bowl with 1/2 cup (100g) granulated sugar mixed with 2 teaspoons cinnamon until evenly coated.
  9. Serve immediately for best texture and gooey center.

Notes

Keep oil temperature steady at 350ยฐF (175ยฐC) to avoid greasy or burnt bites. Pinch dough tightly around filling to prevent leaks. Toss bites in cinnamon sugar while warm for best coating. Refrigerate dough for 10 minutes if too sticky. Baking alternative available but less crispy.
