Delicious Mint Aero Brownies Recipe with Easy Fudgy Chocolate Ganache

These brownies combine airy mint Aero bubbles with a dense fudgy chocolate base, topped with a silky, rich chocolate ganache for a unique and indulgent dessert experience.

  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 3/4 cup (95g) all-purpose flour, sifted
  • 1/2 cup (50g) unsweetened cocoa powder (preferably Dutch-processed)
  • 1/4 teaspoon salt
  • 3 standard-size mint Aero bars (about 150g total), chopped roughly
  • 1/2 cup (120ml) heavy cream, warmed
  • 1 cup (175g) semi-sweet chocolate chips
  • 1 tablespoon (14g) unsalted butter, room temperature
  • 1/4 teaspoon mint extract (optional)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, mix the melted butter, granulated sugar, and brown sugar until combined and glossy, about 1-2 minutes.
  3. Add the eggs one at a time, whisking well after each addition. Stir in vanilla extract until the batter is smooth and shiny.
  4. In a separate bowl, sift together the flour, cocoa powder, and salt.
  5. Gradually fold the dry ingredients into the wet mixture using a spatula, being gentle to avoid overmixing. The batter will be thick and fudgy.
  6. Carefully fold in the chopped mint Aero bars, keeping some bubbles intact.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 25-28 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs. Avoid overbaking.
  9. While baking, prepare the ganache: warm the heavy cream in a small saucepan until just about to simmer (do not boil). Remove from heat and pour over the chocolate chips in a heatproof bowl. Let stand for 2 minutes, then stir gently until smooth and glossy.
  10. Add the butter and optional mint extract to the ganache and stir until fully incorporated.
  11. Once brownies are out of the oven, let cool for 10 minutes. Pour the ganache evenly over the top.
  12. Let the ganache set at room temperature for about an hour or refrigerate for 30 minutes to firm up.
  13. Use the parchment paper overhang to lift the brownies out of the pan. Cut into squares and serve.
