A light, airy cake layered with fresh strawberries and whipped cream, perfect for summer parties and simple indulgence.

  • 2 cups (240g) all-purpose flour, sifted
  • 1 ½ cups (300g) granulated sugar
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • ½ cup (115g) unsalted butter, softened
  • 3 large eggs, room temperature
  • 1 cup (240ml) whole milk, room temperature
  • 2 tsp vanilla extract
  • 2 cups (480ml) heavy whipping cream, chilled
  • ¼ cup (30g) powdered sugar, sifted
  • 1 tsp vanilla extract
  • 3 cups (450g) fresh strawberries, hulled and sliced
  • Optional: 1 tbsp granulated sugar for macerating strawberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 8-inch round cake pans and line bottoms with parchment paper.
  2. In a large bowl, sift together flour, granulated sugar, baking powder, and salt. Whisk briefly to combine.
  3. Using an electric mixer, beat softened butter on medium speed until creamy (1-2 minutes). Add eggs one at a time, beating well after each addition.
  4. With mixer on low, alternately add flour mixture and whole milk in three additions, starting and ending with flour. Mix just until combined. Stir in vanilla extract.
  5. Divide batter evenly between pans and smooth tops. Bake 25-30 minutes or until a toothpick inserted in center comes out clean.
  6. Cool cakes in pans for 10 minutes, then turn out onto cooling racks. Cool completely before frosting.
  7. Hull and slice strawberries. If not very sweet, sprinkle with 1 tbsp sugar and let sit 10 minutes to macerate.
  8. In a chilled bowl, beat heavy cream with powdered sugar and vanilla extract until soft peaks form. Do not overbeat.
  9. Place one cake layer on serving plate. Spread whipped cream over it, then scatter sliced strawberries. Top with second cake layer and spread whipped cream on top and sides. Decorate with remaining strawberries.

Notes

Chill bowl and beaters before whipping cream for best results. Avoid overmixing batter to keep cake tender. Cool cake layers completely before frosting to prevent melting cream. Use fresh ripe strawberries for best flavor. Frozen strawberries can be used if thawed and drained well.
