These easy blueberry banana bread muffins are made in one bowl with simple ingredients. They are soft, moist, and bursting with sweet banana and tart blueberry flavor, perfect for busy mornings or brunch.

Ingredients

Scale
  • 3 medium ripe bananas, mashed (about 1 to 1 1/4 cups)
  • 1/3 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup blueberries (fresh or frozen, if frozen do not thaw; toss in 1 tablespoon flour)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease lightly.
  2. In a large mixing bowl, mash the bananas with a fork until mostly smooth with a few lumps.
  3. Add melted butter, sugar, egg, and vanilla extract to the mashed bananas. Stir until well combined.
  4. Add flour, baking soda, and salt to the bowl. Stir gently until just combined; do not overmix. A few streaks of flour are okay.
  5. If using frozen blueberries, toss them in 1 tablespoon flour. Gently fold blueberries into the batter.
  6. Divide batter evenly among the 12 muffin cups, filling each about 3/4 full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Tops should be golden brown and spring back when touched.
  8. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra tall muffin tops, let the batter rest in the muffin tin for 10 minutes before baking. Use room temperature egg for best results. If using frozen blueberries, do not thaw; toss in flour to prevent sinking.
