These chewy strawberry oat bars are a wholesome, quick, and easy snack made with simple pantry staples and a burst of tangy-sweet strawberry jam. Perfect for a nourishing pick-me-up any time of day.

  • 1 cup all-purpose flour (120 g)
  • 2/3 cup brown sugar, packed (135 g)
  • 3/4 cup unsalted butter, melted (170 g)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup strawberry jam (about 240 g)
  • 1/4 cup cottage cheese, small-curd (optional, 60 g)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×9 inch baking pan or line it with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, combine rolled oats, all-purpose flour, brown sugar, baking powder, and salt. Stir until evenly mixed.
  3. In a separate bowl, whisk the egg, then add melted butter and vanilla extract. Fold in cottage cheese if using.
  4. Pour the wet ingredients into the dry ingredients and mix just until combined. If too dry, add about 1 tablespoon milk.
  5. Press about two-thirds of the oat mixture firmly into the bottom of the prepared pan to form the base.
  6. Spread the strawberry jam evenly over the oat base.
  7. Sprinkle the remaining oat mixture over the jam layer, leaving some jam visible.
  8. Bake for 30-35 minutes until the top is golden and edges are set but center is still slightly soft.
  9. Allow the bars to cool completely in the pan on a cooling rack for 1-2 hours.
  10. Lift the bars out using the parchment paper overhang and cut into 12 squares. Store leftovers in an airtight container.

Notes

Use rolled oats for best chewy texture; avoid quick oats. Line pan with parchment paper with overhang to prevent sticking and ease removal. Do not overmix dough to keep bars tender. Cool bars completely before cutting to avoid crumbling. For gluten-free, substitute flour with gluten-free blend or almond flour. Cottage cheese is optional but adds moisture and chewiness.
