  • 8 ounces penne or rigatoni pasta
  • 1 medium firm apple (Honeycrisp or Gala), diced
  • 1 small yellow or white onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1/2 cup heavy cream or half-and-half
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley or thyme, chopped (optional)

Instructions

  1. Slice the chicken apple sausage into 1/2-inch rounds. Dice the apple, finely chop the onion, and mince the garlic (5-7 minutes prep).
  2. Heat olive oil in a large skillet over medium heat. Add sausage slices and cook 4-5 minutes until lightly browned but not fully cooked. Remove and set aside.
  3. In the same pan, cook chopped onion for 3 minutes until translucent. Add garlic and cook 30 seconds until fragrant.
  4. Stir in diced apple and cook for 2 minutes until slightly softened but still firm.
  5. Return sausage to the pan. Pour in chicken broth and add dry pasta, ensuring pasta is mostly submerged.
  6. Bring to a simmer, cover with a lid, and cook for 12-15 minutes, stirring occasionally to prevent sticking, until pasta is tender and broth mostly absorbed.
  7. Stir in heavy cream and grated Parmesan cheese until sauce is creamy and coats the pasta. Season with salt and pepper to taste.
  8. Remove from heat and sprinkle with fresh parsley or thyme if desired.
  9. Serve immediately while warm.

Notes

If sauce is too thick, add a splash more broth or cream to loosen. Stir gently every 5 minutes during simmer to prevent pasta sticking. Browning sausage first adds depth of flavor. Use fresh Parmesan for best texture. For gluten-free, use gluten-free pasta and ensure sausage and broth are gluten-free. For dairy-free, substitute cream with coconut milk and omit Parmesan or use dairy-free cheese.
