  • 1/2 teaspoon dry mustard powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and freshly ground black pepper to taste
  • 1 cup cooked chicken pieces (optional, shredded or chopped)

Instructions

  1. Melt the butter in a medium saucepan over medium heat for about 2 minutes until just melted and foamy, avoiding browning.
  2. Sprinkle in the flour while whisking constantly. Cook for 2-3 minutes until golden and nutty-smelling, whisking to prevent lumps.
  3. Gradually pour in the chicken broth while whisking vigorously to avoid lumps. Bring to a gentle simmer and stir frequently until thickened, about 3-5 minutes.
  4. Lower the heat and stir in the heavy cream, dry mustard powder, garlic powder, onion powder, salt, and pepper. Simmer gently for 3-4 minutes, whisking occasionally until the gravy coats the back of a spoon.
  5. If desired, fold in cooked chicken pieces and heat through for 2 minutes. Adjust seasoning before serving.

Notes

If gravy is too thick, whisk in a splash of broth or cream to reach desired consistency. If too thin, dissolve a small amount of flour in cold water and whisk in quickly to thicken. Use medium heat to avoid burning the roux. Season gradually and don’t skip the dry mustard powder for best flavor. For dairy-free, substitute heavy cream with coconut cream or almond milk creamer. For gluten-free, use gluten-free flour or cornstarch.
