A quick and easy red velvet bundt cake with a creamy cheesecake swirl, perfect for holidays and last-minute guests. This dump cake combines rich red velvet flavor with tangy cheesecake in a moist, festive dessert.

  • 15.25 oz box red velvet cake mix (preferably Betty Crocker)
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar (100g)
  • 2 large eggs, room temperature
  • 1/2 cup melted butter (113g)
  • 1/3 cup milk (80ml), whole or 2%
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream (60ml), optional

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 10-inch bundt pan thoroughly with butter or non-stick spray.
  2. In a medium bowl, beat softened cream cheese with granulated sugar until smooth and creamy, about 2-3 minutes.
  3. Add eggs one at a time to the cream cheese mixture, mixing after each addition.
  4. Stir in vanilla extract until the mixture is silky and lump-free.
  5. In a large bowl, combine red velvet cake mix, milk, melted butter, and sour cream (if using). Stir gently until just combined; do not overmix.
  6. Pour half of the cake batter into the greased bundt pan, spreading evenly.
  7. Dollop the cheesecake filling over the batter in spoonfuls and gently spread it around without mixing.
  8. Spoon the remaining cake batter on top, covering the cheesecake layer as best as possible.
  9. Bake on the center rack for 50–60 minutes. Check at 50 minutes by inserting a toothpick into the cake portion; it should come out mostly clean with a few moist crumbs.
  10. If the cheesecake layer jiggles too much, bake a bit longer.
  11. Cool the cake in the pan for about 20 minutes, then invert onto a wire rack or serving plate to cool completely.

Notes

Grease the bundt pan thoroughly to prevent sticking. Avoid overmixing the cake batter to keep it tender. Soften cream cheese to room temperature for a smooth cheesecake layer. Cool cake for at least 20 minutes before unmolding to prevent breakage. Baking times may vary; tent with foil if browning too fast.
