Instructions

  1. In a medium bowl, combine sliced strawberries with 1/2 cup granulated sugar, 1 tablespoon fresh lemon juice, and 1 tablespoon cornstarch. Toss gently to coat and set aside for 10 minutes to macerate.
  2. Preheat oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish with butter or non-stick spray.
  3. In a large bowl, beat softened cream cheese with 1/2 cup granulated sugar until smooth and creamy, about 2 minutes using an electric mixer.
  4. Add milk and vanilla extract to the cream cheese mixture and mix until combined.
  5. In a separate bowl, whisk together flour, baking powder, and salt.
  6. Gradually fold dry ingredients into the cream cheese mixture until just combined; do not overmix.
  7. Pour melted butter into the batter and gently fold until incorporated. The batter will be slightly thick but pourable.
  8. Pour batter evenly into the prepared baking dish. Spoon the strawberry mixture evenly over the top without stirring.
  9. Bake for 45-50 minutes until the top is golden brown and strawberry juices are bubbling around the edges. Tent with foil if browning too quickly.
