  • 2 tablespoons ground cinnamon
  • ⅓ cup (70 grams) brown sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together 2 ½ cups (315 grams) all-purpose flour, 2 teaspoons baking powder, ½ teaspoon baking soda, ¼ cup (50 grams) granulated sugar, and ½ teaspoon salt until evenly combined.
  3. In a separate bowl, stir 1 cup (245 grams) fat-free plain Greek yogurt, 1 large egg white, and 1 teaspoon vanilla extract until smooth.
  4. Pour the wet ingredients into the dry mix and stir gently with a wooden spoon or spatula until the dough just comes together. If too sticky, sprinkle a little more flour carefully.
  5. Lightly flour a clean surface and rolling pin. Roll the dough into a 12×8 inch (30×20 cm) rectangle about ¼ inch (6 mm) thick.
  6. Mix 2 tablespoons ground cinnamon and ⅓ cup (70 grams) brown sugar in a small bowl. Sprinkle evenly over the rolled dough.
  7. Starting from the long edge, roll the dough tightly into a log. Cut the log into 9 even slices (about 1 inch or 2.5 cm thick) using a sharp knife or dental floss.
  8. Arrange the slices cut-side up in a greased or parchment-lined 9×9 inch (23×23 cm) baking dish, leaving space between each.
  9. Bake for 25-30 minutes until golden brown and cooked through. Rolls should spring back when lightly pressed.
  10. Optional: While baking, whisk ½ cup (60 grams) powdered sugar with 1-2 tablespoons almond milk until smooth. Drizzle over warm rolls after baking.
  11. Let rolls cool slightly for 5-10 minutes before serving. Best enjoyed warm.
