Ingredients

Scale
  • 1 pound ground beef (80/20 works best)
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika (optional)
  • ยฝ teaspoon garlic powder
  • ยฝ teaspoon onion powder
  • ยฝ teaspoon salt
  • ยผ teaspoon black pepper
  • โ…“ cup water
  • 6 large flour tortillas (10-inch, burrito-style)
  • 6 tostada shells (or 12–15 sturdy corn tortilla chips)
  • 1 cup sour cream
  • 1 cup nacho cheese sauce (homemade or store-bought)
  • 1ยฝ cups shredded Mexican blend cheese (or cheddar, Monterey Jack)
  • 2 cups shredded iceberg lettuce (thinly sliced)
  • 1 cup diced tomatoes (seeded and drained)
  • 2 tablespoons vegetable oil (for toasting)

Instructions

  1. Season and cook the beef. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until browned and fully cookedโ€”about 6-8 minutes. Drain any excess fat (leave about a tablespoon for flavor). Reduce heat to low, then add the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Stir in the โ…“ cup of water and let it simmer for 2-3 minutes until the liquid thickens slightly. Set aside.
  2. Prep your toppings. While the beef cooks, shred the lettuce into thin strips, dice the tomatoes (remove the seeds and juice), and grate the cheese if you’re using a block. Pat the lettuce dry with paper towels.
  3. Warm the tortillas. Microwave the large flour tortillas for 15-20 seconds, wrapped in a damp paper towel. This makes them pliable and less likely to tear when you fold them.
  4. Layer the first Crunchwrap. Lay one tortilla flat on a clean work surface. Spread about 2 tablespoons of sour cream in the center, leaving a 2-inch border around the edges. Spoon about โ…“ cup of the seasoned beef over the sour cream, spreading it evenly. Place one tostada shell directly on top of the beef. If you’re using chips, arrange them in a single layer to cover the beef.
  5. Add the cheese and toppings. Spoon about 2 tablespoons of nacho cheese sauce over the tostada shell. Sprinkle a generous handful of shredded Mexican cheese (about ยผ cup) on top. Add a small handful of shredded lettuce and a tablespoon of diced tomatoes. Don’t overstuffโ€”you need room to fold.
  6. Fold the tortilla. Start folding one edge of the tortilla toward the center, creating a pleat. Continue folding around the entire circumference, overlapping each pleat slightly, until the filling is completely enclosed. Press down gently to seal.
  7. Toast the Crunchwrap. Heat a medium skillet or griddle over medium heat and add a thin layer of vegetable oil (about 1 teaspoon). Place the Crunchwrap seam-side down in the skillet. Cook for 3-4 minutes, pressing down gently with a spatula, until the bottom is golden brown and crispy. Carefully flip and cook the other side for another 3-4 minutes. The cheese inside should be fully melted, and the tortilla should be deeply golden.
  8. Repeat with remaining ingredients. You’ll get about 6 Crunchwraps from this recipe. Keep the finished ones warm on a baking sheet in a 200ยฐF oven while you finish the rest.
  9. Rest before cutting. Let the Crunchwrap sit for 2 minutes after toasting. This helps the fillings set and prevents everything from spilling out when you cut it. Use a sharp knife to slice it in half.

Notes

Warm tortillas are non-negotiable to prevent tearing. Don’t overstuff. Toast seam-side down first to seal. Assemble up to 4 hours ahead and refrigerate. Reheat in a dry skillet or air fryer at 350ยฐF for 5-6 minutes. Freeze assembled (untoasted) for up to 2 months.
