A warm, hearty, and creamy potato soup topped with crispy bacon, perfect for cozy nights and quick dinners. This comforting recipe balances silky potatoes with smoky bacon crunch for a satisfying meal.

Ingredients

Scale
  • 4 medium russet potatoes, peeled and diced
  • 6 slices bacon, cooked crisp and crumbled
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups (32 fl oz) chicken broth (low sodium recommended)
  • 1 cup (8 fl oz) heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, shredded cheddar cheese, sour cream

Instructions

  1. Cook the bacon: Place 6 slices of bacon in a cold skillet over medium heat. Cook until crispy, about 8-10 minutes, turning occasionally. Transfer to a paper towel-lined plate to drain and crumble once cool.
  2. Sauté aromatics: In a large pot or Dutch oven, melt 2 tablespoons of butter over medium heat. Add the chopped onion and cook until translucent and slightly caramelized, about 5-7 minutes. Stir in minced garlic and cook for another 1 minute until fragrant.
  3. Add potatoes and broth: Add the diced potatoes to the pot, then pour in 4 cups (32 fl oz) of chicken broth. Bring to a boil, then reduce heat to low and simmer until potatoes are tender, about 15-20 minutes. Test tenderness by piercing a potato with a fork—it should slide in easily.
  4. Mash and cream: Using a potato masher or immersion blender, mash the potatoes in the pot, leaving some chunks for texture. Stir in 1 cup (8 fl oz) of heavy cream. Heat gently until warmed through but don’t let it boil to avoid curdling. Season with salt and pepper to taste.
  5. Serve with toppings: Ladle soup into bowls and sprinkle with crispy bacon crumbles. Add optional toppings like shredded cheddar, green onions, or a dollop of sour cream. Enjoy immediately!

Notes

If the soup is too thick, add a splash of broth or cream to loosen it up. Taste and adjust seasoning gradually, especially salt and pepper. For a smoother texture, use an immersion blender but avoid over-blending to prevent gluey soup. Cook bacon slowly in a cold pan for best crispiness. Leftovers keep well in the fridge for up to 3 days; reheat gently and add cream fresh if frozen.
