  • 2 tablespoons (30 ml) cherry syrup or grenadine
  • Juice of half a lime (about 1 tablespoon or 15 ml) fresh lime juice
  • 1 cup (240 ml) club soda or sparkling water
  • 2 generous scoops (about ½ cup or 120 ml) vanilla ice cream or vanilla frost (dairy-free coconut milk-based ice cream optional)
  • Several handfuls of ice cubes
  • Optional garnishes: maraschino cherries, lime wedges, fresh mint sprigs

Instructions

  1. Fill your glass halfway with ice cubes to keep the drink chilled.
  2. In a mixing glass or pitcher, combine 2 tablespoons (30 ml) cherry syrup and 1 tablespoon (15 ml) fresh lime juice. Stir gently to blend.
  3. Pour 1 cup (240 ml) club soda or sparkling water into the cherry-lime mixture. Stir slowly to mix without losing carbonation.
  4. Carefully pour the cherry lime soda over the ice in your prepared glass, leaving room at the top for the frost layer.
  5. Gently scoop 2 generous spoonfuls (about ½ cup or 120 ml) of vanilla ice cream or vanilla frost on top. Let it float and slowly melt into the soda.
  6. Add a maraschino cherry and a lime wedge on the rim, or a sprig of fresh mint if desired. Serve immediately with a straw or spoon.

Notes

Use fresh lime juice for best flavor. Stir gently to preserve carbonation. Let ice cream soften slightly for easy scooping. Prepare syrup and lime juice mixture ahead but add soda and ice cream just before serving. For a vegan version, use coconut milk-based vanilla ice cream. Experiment with different syrups or add a splash of rum or vodka for an adult cocktail.
