A quick and easy summer cocktail cooler combining ripe peaches, Coca-Cola, and a splash of whiskey or bourbon for a refreshing and unique flavor.

  • 2 ripe peaches, sliced
  • 12 fl oz (355 ml) Coca-Cola, chilled
  • 1 oz (30 ml) whiskey or bourbon (optional for non-alcoholic version)
  • ½ oz (15 ml) peach schnapps (optional)
  • 1 tbsp (15 ml) fresh lemon juice
  • 1 tsp (5 ml) simple syrup
  • Ice cubes, plenty
  • Fresh mint leaves, a few sprigs for garnish

Instructions

  1. Wash and slice 2 ripe peaches into thin wedges. Reserve a few slices for garnish. Place the remaining peach slices in the bottom of your mixing glass.
  2. Using a muddler or wooden spoon, gently press the peach slices to release their juices. Avoid over-mashing to keep some texture. If peaches aren’t very sweet, add 1 teaspoon of simple syrup now.
  3. Pour in 1 oz (30 ml) whiskey or bourbon, ½ oz (15 ml) peach schnapps, and 1 tablespoon (15 ml) fresh lemon juice. Stir gently to combine. For a non-alcoholic version, skip whiskey and schnapps and add a splash of peach nectar.
  4. Fill the glass with plenty of ice cubes to chill the mixture thoroughly.
  5. Slowly top with 12 fl oz (355 ml) chilled Coca-Cola. Pour slowly to preserve carbonation. Give the drink a gentle stir to mix without losing fizz.
  6. Add peach slices and a sprig of fresh mint on top for garnish. Optionally, rim the glass with sugar or a pinch of cinnamon.

Notes

Do not over-muddle peaches to avoid bitterness and murky drink. Use chilled ingredients to keep the drink refreshing without excessive ice dilution. Pour Coke slowly to preserve fizz. Fresh lemon juice brightens the flavor better than bottled. Prepare peach base ahead and add soda and ice just before serving for parties.
