  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1½ cups mini Easter candy eggs
  • ½ cup (90 g) white chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, then beat in vanilla extract until just combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or folding with a spatula until just incorporated. Avoid overmixing.
  6. Gently fold in the mini Easter candy eggs and white chocolate chips, being careful not to crush the candy eggs.
  7. Spread the batter evenly in the prepared pan and smooth the top with a spatula.
  8. Bake for 28-32 minutes, until edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
  9. Cool completely in the pan for at least 30 minutes before lifting out and slicing into bars.
  10. Serve and enjoy the soft, loaded bars.
