  • 1 cup (250 g) creamy peanut butter
  • 1/2 cup (140 g) marshmallow fluff
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (160 g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl, cream together the softened butter, granulated sugar, and light brown sugar using an electric mixer on medium speed until fluffy and light, about 2-3 minutes.
  3. Mix in the creamy peanut butter and marshmallow fluff until fully combined; the mixture will look slightly sticky.
  4. Add the large egg and vanilla extract, beating until smooth and scraping down the sides as needed.
  5. In a separate bowl, sift together the all-purpose flour, baking soda, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low speed just until incorporated. Avoid overmixing.
  7. Using a medium cookie scoop or spoon, drop dough balls about 2 tablespoons each onto the prepared baking sheets, spacing them 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are set but the centers still look slightly soft. They will firm up as they cool.
  9. Let the cookies rest on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.

Notes

Use softened butter for best creaming results. Avoid overmixing after adding flour to keep cookies tender. Chill dough for 30 minutes if thicker cookies are desired. For extra texture, fold in mini chocolate chips or chopped peanuts before baking. Microwave marshmallow fluff for 10 seconds if hard to mix.
